Toasted Sesame Dressing

Instant and delicious shrimp or scallop appetizer: The combination of soy, lemon and toasted sesame goes great with all seafood. Peel medium shrimp and toss in a bowl with enough Toasted Sesame Dressing to coat. Broil, sauté or grille for a few minutes or until done. Garnish with lemon and parsley.

On a sandwich! (Our favorite): Just spread on your sandwich bread as you would mayonnaise; an incredibly delicious alternative (and cholesterol-free).

Great travel food: Easy to prepare, healthy road food. Take an 8" flour tortilla or mountain bread, place a handful (don't use too much-it will be hard to roll) of your favorite salad veggies - lettuce, spinach, grated carrot, mushrooms, avocados, tomatoes, whatever you like or have on hand - in a line in the center, pour Toasted Sesame Dressing over the top of the filling and roll it up tightly. It won't take long to get the hang of this. Cut in half, wrap in waxed paper.

Jazz up leftovers: Roll leftovers in a tortilla using method described above or just heat them up and add Toasted Sesame Dressing. This works with just about anything; leftover pasta, rice, vegetables, tofu, chicken or fish. Place in a lightly oiled baking dish and bake at 350 till hot.

Simple yet elegant seafood dinner: Any kinds of fish filets are good this way. Especially delicious grilled. Salmon, tuna, cod, haddock, flounder... Just place filets in a lightly oiled baking dish, spread liberally with Chilmark's Toasted Sesame Dressing and bake or broil. If you grille it, coat both sides. Grilling gives it a wonderful crisp coating. Serve with lemon.

Grilled vegetables, tofu or chicken: Place in a large bowl, pour on the Toasted Sesame Dressing and mix so that everything is completely coated. Place on a hot grill and cook. Asparagus, onion rings, eggplant, peppers, summer squashes; it goes with everything. (Veggies and tofu don’t take long - make sure to cook chicken thoroughly.)

Honey-sesame chicken: Whisk some honey into Toasted Sesame Dressing and coat chicken; bake, broil or grill.

Kids love it, too! Try it as a vegetable dip. It goes well with all kinds of veggies: carrots, celery, red and green peppers, green beans. It's really good on fresh tomato wedges. Try it with broccoli, asparagus, avocado, radish halves, radicchio or mushrooms.
